Ingredients:
- Dough:
- 1 Cup Butter (softened)
- 2 Cups Light Brown Sugar
- 3 Eggs (beaten)
- 4 Cups Flour
- 1/2 Teaspoon Salt
- 1/2 Teaspoon Baking Soda
- Date Paste Filling:
- 2 1/4 Cups Dates (chopped)
- 1 Cup Sugar
- 1 Cup Water
- 1 Cup Walnuts (finely chopped)
Directions:
- Cream butter, brown sugar and eggs.
- Add flour, salt and baking soda. Mix until blended.
- Chill the dough for 1 hour.
- In a medium pot on medium heat on the stove, stir dates, sugar and water. Simmer for 10 minutes until thickened.
- Stir in walnuts and allow to cool.
- Divide dough into 3 parts.
- Roll 1 part with a rolling pin to 1/4 inch thick in a rectangular or square shape.
- Spread 1/3 of filling over the rolled out dough.
- Roll dough starting from any edge. For rectangular shapes, start at the short edge.
- Wrap in wax paper and chill overnight.
- Cut in 1/2 inch thick slices. Place on a greased cookie sheet and back.
- Bake at 400°F for 10 minutes.
